Recipe – Conch Fritters

  • 6 conch
  • 1 onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 sticks celery
  • 2 scotch bonnet peppers
  • 3 eggs
  • 1 tbsp fajita seasoning
  • ½ tsp leaf thyme
  • 1 tsp Cajun seasoning
  • 1 cup flour
  • 1 tbsp baking powder
  • Milk

For the sauce:

  • 1 ½ cups ketchup
  • Juice 2 lemons
  • 3 tbsp. horseradish
  • Hot sauce to taste


In a food processor chop conch, add onion, peppers and celery, chop coarsely; add remaining ingredients; and blend. You may need to add milk to make a soft mixture that holds together but not a thick paste. Heat oil (preferably peanut) in a deep fat fryer or deep frying pan and drop tablespoon size balls into the fat. Fry until golden and serve hot with the sauce.
